Ingredients for 4 portions
1 tin kidney beans
1 can beans, white
1 tin tomatoes, chunky
500 ml vegetable broth
2 sweet peppers, red
1 large onion
2 cloves garlic
2 tbsp balsamic vinegar
olive oil
salt and pepper
nutmeg
chili powder
1 bay leaf
Preparation of our Spicy Vegetarian Bean Stew
Chop the onions, garlic and peppers into small pieces. Brown the onions and garlic in the olive oil, add the peppers and beans and deglaze with the chopped tomatoes and vegetable stock.
Add balsamic vinegar and spices as desired and simmer at medium heat for about 20 minutes. Season to taste before serving.
If you like, you can also cook small potato cubes as an inlay.
Baguette also goes well with this dish.
