The recipe for Dirty Rice comes from the Cajun kitchen. This traditional dish is guaranteed to be tasted by anyone who likes to eat offal.
“Dirty Rice” gets its name from the gray color it gets in the original, if you prepare the dish with Giblets.

 

 

Ingredients for 4 portions

  • 1.5 cup long grain rice
  • 2 cups of water
  • 2 cup chicken soup
  • 4 tbsp olive oil
  • 250 g minced meat
  • 250 g chicken liver
  • 2 red peppers
  • 2 celery sticks
  • 1 tsp Cajun spice
  • 2 spring onions
  • 3 slices of bacon
  • 1 piece onion

 

 

Preparation

For the Dirty Rice, cook 1.5 cups of long grain rice with 2 cups of water and a cup of chicken soup according to the package instructions. Loosen the cooked rice with a fork and let it cool down a bit.

Heat the olive oil in a large pan. Fry the diced bacon until crispy. Then add the minced meat and fry until it is browned.

Add the chopped onion, the diced pepper and the celery cut into small pieces, stir and fry a little.

Cut the chicken liver into small pieces or purée briefly in a blender and add to the pan. Fry for a few minutes, stirring from time to time. If something gets stuck in the bottom of the pan, reduce the temperature a little.

Add the rest of the chicken soup together with the Cajun spice, scrape off the bottom of the pan with a wooden spoon and raise the temperature until the soup has overcooked.

Now fold in the rice, mix well, add the spring onions cut into rings and mix well again.

 

Tip:
If you like it hotter, you can also replace the pepper with jalapenos.
