Ingredients for 4 people:
- 250 g smoked salmon (alternatives see below)
- 50 g salmon caviar
- 1/2 lemon
- some watercress (optional, for the set)
- additional lemon or lime for the garnish
- some chives
- 60 g butter
- 4 tablespoons Greek yoghurt
Cut the salmon into small pieces. Put the butter in a bowl and spoon with a wooden spoon.
Stir until smooth. Add the salmon and mix well.
Wash the chives and cut into rings. (Should make about 2 tbsp. chives rolls.)
Wash the lemon, the peel with a tench shredder.
and chop finely. Squeeze out the juice. Both together with the chives and the yoghurt.

Serve the salmon rillettes on plates or small slices of bread.
With the salmon caviar, the watercress and lemon or lime wedges.
Variations: Instead of the classic smoked salmon, hot smoked salmon or poached salmon can also be used.
For poached salmon, buy the same amount of fresh salmon, poach and then peel off the skin.
The salmon rillettes can be kept in the fridge for one day. So you can prepare it well.
