Italian Pasta Salad with Dried Tomatoes and Feta Cheese – Ingredients:

500 g pasta
1 glass of olives, black, pitted, without herbs
1 glass of tomatoes, dried in oil
4 tablespoons oil of tomatoes
4 tbsp tomato paste
4 cloves garlic, pressed through
1 pck. feta cheese
salt and pepper
cayenne pepper
1 bunch arugula
1 pck. pine nuts

Preparation:

Preparing the Italian Pasta Salad with Dried Tomatoes and Feta Cheese is pretty easy.
Cook the pasta in salted water and drain. Crumble the feta cheese with your hands. Drain the dried tomatoes, collecting 4 tablespoons of oil. You may also cut the tomatoes and olives into small pieces, but you don’t have to.

Mix all the ingredients from olives to feta cheese with the warm pasta. Season with salt, pepper and cayenne pepper.

Add the arugula and the pine nuts roasted briefly in the pan just before serving.

The pasta salad tastes best when it has been in the fridge for 1 night.
