Low in calories, tasty and really healthy. The carrot is one of the top stars of local vegetables. The root vegetable can be used in many ways in the kitchen and is even said to protect against disease. Carrots are the popular root vegetable, which has always been said to have health benefits due to its low calories and valuable nutrients.

Carrot Stew with Meatballs – Ingredients:

1 kg carrots
300 g potatoes
300 g celery
2 onions
2 tbsp butter
1 ½ Litre meat broth, instant
salt and pepper
300 g minced meat, half and half
1 small onion
1 small clove of garlic
2 tbsp breadcrumbs
1 egg
sweet pepper powder
1 tbsp parsley, chopped
1 tbsp chives

 

Preparation:

Peel and wash the carrots, potatoes, celery and onions. Cut carrots, potatoes and celery into cubes, onions into rings.

Heat the butter in a cooking pot and fry the onions in it until translucent. Add the vegetable cubes and sauté for about 5 minutes. Add the broth, season with salt and pepper and simmer for about 35 minutes in a closed pot.

Peel the small onion and the garlic clove and dice finely. Knead with minced meat and breadcrumbs and season to taste with salt, pepper and sweet pepper powder. Form meatballs and add to the soup about 20 minutes before the end of the cooking time.

Serve the soup sprinkled with parsley and chive rolls.
